Cabernet Franc Parings : À La Carte

Our Cabernet Franc is exuberant and full of flavor. When selecting foods to pair seamlessly it is important to choose foods that will compliment our Cabernet Franc, not overpower or underwhelm it. We have put together a simple “À La Carte” menu to spotlight some of our favorite pairings.


 

Cheese

Bloomy, nutty, hard & soft cheeses; all three milks will suffice—Our Cabernet Franc will pair seamlessly with a multitude of cheeses. Because of its medium tannins and gentle acidity, it is less likely to overpower the palate. Granted, there are still certain cheeses that make this wine shine more than others. We recommend hard cheeses with salty, savory, and nutty flavors. As well as, select soft cheeses that have herbaceous bloomy notes and tart- tangy acidity. 

What you should try: Cheddar, Manchego, Parmigiano-Reggiano, and Pecorino, Brie, Camembert or Blue as well as Goat and Gorgonzola. 


 

Meat

Red-Fatty meats, seasoned with herbs & pepper—Our Cabernet Franc pairs fantastically with red-fatty meats that have been seasoned generously with herbs and pepper. This combination allows our wine to match the flavors and aromas of the meat seamlessly. While at the same time, utilizing its tannins and acidity to cut through the fatty coating that these heavy meats leave behind on the palate. Try pairing smoked meats (without sweet sauces) with our Cabernet Franc as well.

What you should try: Grilled Steak, Roasted Lamb, Pork Chops, Meat Stew (tomato-based), Meatballs, Lamb Burgers, Leg of Lamb, Brisket, Grilled Sausages, Pork Belly, and Veal. 


Veg

Sweet, acidic, umami veg with herbaceous seasoning & fatty cheese—If you're not a big meat eater, a multitude of pasta dishes with red sauces will pair fabulously with our Cabernet Franc. The acidity in the wine balances with the acid in the tomato’s, as well as the fats in the cheese. Maximizing the flavor profiles of each sip and bite you take. Feel free to add meat into the mix to further enhance the experience.

What you should try: Margherita Pasta, Bucatini Amatriciana, Spaghetti with Sun-Dried-Tomatoes and Almond Pesto, Classic Spaghetti (For meat eaters add meatballs with a mixture of beef, veal, and pork for flavor packed meatballs), Pasta with Salami Bolognese.
